Join The Wedding Designer, El Poco Loco and their very special guest, chef Nic Poelaert for a rustic French dinner event that will exemplify sophistication and imagination.
Our unconventional location will be transformed with lighting, floristry and styling for a magical collective dining experience, with a selection of canapés on arrival and cheese table by the Cheese Mongrel, generous shared first course and a main course that celebrates Australia’s finest beef. A concept dessert will top off the culinary journey.
Enjoy a range of entertainment throughout the night and an exclusive glimpse into Chef Poelaert’s signature style in his debut to Newcastle.
Dinner will be complemented with breads by Baked Uprising, beverages by Vinden Estate and the Inner City Winemakers, with The Retro Kombi Coffee providing your post-dinner caffeine fix.

About the Chef
With an international repertoire of Michelin-star restaurants under his belt, including a stint with Gordon Ramsey (London), the kitchen of Michel and Sebastien Bras (France) and the appointment as CHANEL Melbourne’s head chef, Nic Poelaert has consistently provided an exemplary level of food and service to guests and VIPs around the world.
Poelaert’s solo adventure Embrasse Restaurant garnered a multitude of awards including Young Chef of Year, Best New Restaurant RCA, Melbourne and a listing in the Australian Gourmet Traveller’s top hundred best restaurants in Australia.
In 2013, Poelaert was given the opportunity implement, with full responsibility, Brooks of Melbourne. This was like no other restaurant, a new school establishment with old school manners, the room and the kitchen as one. The food, the wine, the service, the atmosphere were original, unusual, unconventional, with many critics suggesting they were ahead of their time.
