"Crop to Drop"

Sunny Hill Farm was settled in 1872 by the Colliver family and has remained in that name until this day. Current owner and descendant Sam Colliver and his wife Olivia are the founders, owners and operators of Sunny Hill Distillery. The farm is a broad acre cereal cropping venture where part of the grain that is produced is then used in the distillery to make quality craft spirits.

Sustainable Production

The wheat grown on Sunny Hill Farm is used for vodka production which then forms the base for gin and liqueurs. Barley is also used for whisky production. Every drop of rain that can be caught is used for production purposes. A 5kw solar system is the beginning with the end goal of being fully independent with solar and battery. All liquid waste from the production floor is contained on site with the use of an evaporation pond. Spent grain is picked up by our local pig farmer.

Casks laid away

In between making vodka, gin and liqueurs the distillers also lay away as many casks for aging that they can. Barley grown on the farm is taken to Barossa Valley Craft Malt to be malted before being returned to the distillery to be mashed, fermented and distilled then laid away in a cask to age the minimum two years. Rum production has also begun using mollasses from Queensland (no sugar cane on the Yorke Peninsula!)
